Until I reach my goal weight, I consider myself in "The Final Episode" of my journey. For a long time, I was satisfied with my weight loss and getting off meds for type 2 diabetes. I am no longer complacent. I am ready to get to the end of the journey--getting the rest of my weight off.
As @tannyraw says, "you have to have a WHY." My WHY is that I want to be the best example of how this lifestyle transforms.
So, what 2 priorities have I committed to in order to reach my final goal? 1) Walking daily 2) Eating clean whole plant foods
To help me focus, I am taking a break from photographing and posting my food. Doing this, I felt, was keeping my focus on the food too much. I need to simplify right now...stay out of the kitchen more. That's why you're not seeing food photos on my IG or FB.
Right now, I weigh the lowest I have in 25 years...which is amazing and a blessing! But, the journey is not over. I am encouraged and excited. Stick with me to the end. I need you! 13 ♡ 6 ✍
mini mushroom beetroot "quiches": Process 1T flaxmeal, 1c each rolled oats and nuts (almonds or cashews), 1tsp each parsley and oregano, 1/2tsp pink salt, 1T applesauce or chopped apple and 1/4c water. Press dough into 8 muffin cups and up sides. Fork and bake at 350 degrees for 10min. Process 4oz organic sprouted tofu until creamy. Water sauté 1/2 chopped red onion and 2 minced garlic cloves-5min. Add 2c chopped mushrooms-sauté 5min. Add 1.5T nutritional yeast, 1tsp each oregano and pink salt, pinch of red pepper flakes and stir until combined. Process sautéed ingredients with tofu, 1/4c finely grated beetroot and 1/2c chopped chives, fresh basil and oregano combo. I had a super busy day today (early morning gym sesh, espresso class at counter culture, bio final, and move out) so I had a huge breakfast to keep me full throughout the day until dinner! -oat bran and rolled oats cooked in water with almond extract, almond butter, and maple syrup, topped with banana, coconut flakes, and more maple syrup 🤤

So, oil. What gives?! Most people consume oil – and we're even told that olive oil and coconut oil are health foods! So what's the big deal?? ...... The truth is, no oil is good for you. .
Ok, oil is made from plants – so it's vegan – but think about it... The fat is stripped from the plant, removing almost all nutrients including protein, carbohydrates, vitamins, minerals, fibre and water. What's left is pure fat. Per gram, oil has more calories than any other food. So, if you're looking for nutritional bang for your caloric buck, oil is a losing game. Not to mention that excess calories get stored as fat no matter what type of calories you consume. .
The darker side of oil is that all varieties have a negative impact on blood vessels and promote heart disease 💔 .
Luckily, nature gave us another beautiful creation in the form of tahini. And because tahini is made by grinding whole sesame seeds (like a nut butter), it's a whole food, with all of its nutrients still in tact! Hallelujah! Use this delicious, versatile ingredient as the base of your salad dressings and you'll never look back. .
